These 2015/16 harvest green (un-roasted) coffee beans come from selected farms in Caranavi in the Yungas region of Bolivia. We are very happy with our long term relationship with coffee farming communities and we have already seen significant improvements in the quality of their coffee and the lives of the farmers. We are proud to be the main source and inspiration for both improvements. These coffee beans are 100% Specialty Arabica and shade-grown in the higher altitudes of the Carrasco La Reserva County, Caranavi Province.These coffee beans were de-pulped and washed using pure Andes mountain-spring water, sun-dried on wooden table tops and hand selected by “Palliris” (Aymara Indian women food graders). Because of their flavor and aroma (see cupping notes below) we prefer a moderately dark (#45 Agtron/SCCA) roast for these coffee beans. However, other roasters prefer it darker-roasted. Some roasters use it as a single-origin, others use it as a mandatory component of their special “secret” blend. Try all combinations and you decide! Our Head Cupper gave this coffee a score of 83. Cupping notes: Bright acidity with sweet, fruity chocolate aroma. Floral caramel, honey, intense citrus, medium body, orange overtones throughout. Round balance.
